The Montshire Maze is an adventurous 400-mile bikepacking route through the upper Connecticut River basin, spanning the northern woodlands of Vermont and New Hampshire. In the 10th century, Arabic traders introduced rice, saffron, and advanced cooking techniques, which, when combined with the Italian culinary tradition, gave rise to Italy's most famous street food.
